In same pan cook diced bacon until crisp. Remove to paper towel with slotted spoon. Drain all but 1-2 Tbsp. oil from pan. Add sliced red onion to pan and cook on med-low heat stirring occasionally until caramelized, about 10 min. Add minced garlic, honey, balsamic vinegar, cooked bacon, thyme, and oregano. Stir to mix well and continue cooking until reduced by half. Add in chicken broth and drained can of petite diced tomatoes.
