  1. Heat olive oil in large frying pan. Season both sides of pork chops with salt and pepper. Sear pork chops in oil 4 min on each side. Remove from pan and set a side.
  2. In same pan cook diced bacon until crisp. Remove to paper towel with slotted spoon. Drain all but 1-2 Tbsp. oil from pan. Add sliced red onion to pan and cook on med-low heat stirring occasionally until caramelized, about 10 min. Add minced garlic, honey, balsamic vinegar, cooked bacon, thyme, and oregano. Stir to mix well and continue cooking until reduced by half. Add in chicken broth and drained can of petite diced tomatoes.
  3. Add pork chops back into pan and cook on med-low 12 min uncovered. Occasionally spooning sauce over pork chops while they continue to cook until done.
