Burgers
  1. Mix together lamb, garlic, cumin, salt and pepper. Form into 4 1/2 lb burgers, making sure to press slight dip into center of each burger. This will help with the burger shrinkage.
  2. Heat grill to medium high using indirect heat method (2 burners on and 1 off) When grill is hot, place burgers over non lit side but close to lit side and cover. Keep burgers on this side until the internal temp is 100 degrees. Flip often! When burgers reach 100 degrees, move to lit side and flip often until internal temp is 130 degrees. This will give you a nice medium rare burger. Top with slice of Havarti cheese.
  3. Butter the 4 buns and place on grill for about 3 minutes. Just until you get a nice grill mark and the bun starts to get crusty on the cut side. Spread 1 Tbsp. each of Mayonnaise and Tomato relish on to buns then place burger on bottom bun, top with Arugula then top bun and enjoy!
Tomato Relish
  1. In a medium-sized, heavy-bottomed saucepan, combine all ingredients for the jam and place over medium-low heat. As the jam begins to simmer, stir with a flat-bottomed wooden spoon every 3 or 4 minutes. As the jam begins to thicken, it has a tendency to scorch if you don’t watch it. Cook jam for about 30-40 minutes, or until it has a thick, viscous consistency and can coat the back of a spoon. Transfer jam to a non-reactive bowl and fold in the mint. Set aside. This can be made up to 1 week in advance
