Kombucha Tea

Kombucha is a probiotic-rich drink. Rumored to have originated in China around 200BC, societies throughout the world have been brewing kombucha for centuries. It is made by placing a strange gummy mushroom-like life form, called a scoby, into a gallon of sweetened tea.

SCOBY is actually an acronym for Symbiotic Culture of Bacteria and Yeast, and the kombucha gets its unique flavor and probiotic power because the scoby “˜eats’ the sugar and components of the tea leaving delicious, nutritious kombucha behind.

Spring Canning Class

Canning produces flavorful, high-quality food that saves money, builds self-reliance and creates lifelong memories. Home canning offers the ability to use fresh, great-tasting and hard-to-find ingredients, such as heirloom tomatoes or delicate peaches picked at the peak of ripeness. These simply can’t be used for commercial products because produce fully ripened on the vine or tree simply can’t stand up to long-distance shipping. Textures are better, more alive and real which the absence of additives has something to do with the difference, as does the selection of top-quality ingredients. Also, if you are blessed with a productive garden this year, you will be able to preserve those summer flavors and enjoy them during the fall and winter. Even if you don’t have your own garden, you’ll enjoy safer, better-tasting food if you buy in bulk from a local producer and can it yourself.

There will be two parts to the class, the first part will be water bath canning which will include high acid foods like fruits.

The second part will be pressure canning, using a pressure canner to can low acid foods like veggies or broths.

When :        Saturday, March 2nd

Pastured Chicken

We are still able to add chickens to the Christiansen Family Farm order. Here is some information from their site:

“Your family will enjoy dining on our antibiotic and hormone free chickens. You can feel good knowing that our chickens are raised humanely and live a happy life outdoors on pasture. However, they will also have ample shelter provided in order get out of the elements. Like our pigs, our chickens are fed a premium 100% vegetarian multi-grain diet of Utah grown grains including wheat, barley, oats, and triticale. This is in addition to the grasses and alfalfa they pick at.”

“Our chickens have lots of white breast meat. Because they are raised on pasture, our chickens are lean, tender, flavorful, and nutritious. Careful farming practices ensure the chickens do not grow too fast and live a happy, comfortable life. About 95% of the chickens fall in the 3-6 lb weight range when dressed. There are always a few that are a little lighter or a little heavier.”

Tattler Reusable Canning Lids

I have personal experience using these lids! I have had 100% success with them sealing. No more running out to the store for more lids, once you have a full stock you will never again be in a panic. They are easy to use and store.  I am planning a class to teach the art of home canning so this is a perfect complement.

Here is a bit from their website:

TATTLER Reusable Canning Lids were developed to fill a need for a reusable home canning jar lid. It does everything it is claimed to. We guarantee the TATTLER plastic lid to last a lifetime or we will replace it free. However, no customer has EVER made the request to replace a single lid.

TATTLER lids work in any accepted method of use, pressure cooker, boiler, etc. and they come with a rubber ring which is also re-usable, so long as it is not damaged (cut or stretched).

TATTLER lids are especially desirable for acid foods, pickles, peppers, tomatoes etc., since they will not corrode. We have only recently disposed of product that was canned over 20 years ago and they were still tightly sealed. (We did not and do not recommend use of food with extended age, this was only furnished as interesting info.)

TATTLER Reusable Canning Lids are exactly what we claim them to be, “REUSABLE!” Many of our customers have contacted us and told of more than 30 years use. I welcome you to visit our testimonial page and see for yourself.

The reusable nature of TATTLER lids is perfect for the home canner interested in saving money and time. They are also fantastic for those of us who wish to Reduce, Reuse and Recycle. TATTLER Reusable Canning Lids fill a market need by providing a cost effective alternative to metal lids, as well as a safe, environmentally friendly product for your home food preservation. One very important factor regarding TATTLER lids is they are BPA FREE!
